Springfield restaurant closes for 24 hours after violating risk plan
A Springfield restaurant had to close for 24 hours this week after its permit was suspended due to violation of risk control plans. The restaurant re-opened on Tuesday, according to an April 11 re-inspection report from the Springfield-Greene County Health Department. The report also noted that the establishment was to schedule an educational visit from the health inspector, and that all employees must be present for that visit.
Creasian, 501 W. Chestnut Expressway, was put on a risk control plan on March 21, which required the restaurant keep all potentially hazardous food above 135 degrees or below 41 degrees. In an April 10 inspection, fried chicken, egg rolls, and crab rangoons were all on the counter and did not measure above 135 degrees or below 41 degrees, according to the report.
Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department.
Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Corrective action: Risk control plan stated all potentially hazardous foods shall be cold or hot held. Owner stated fried chicken was to be cold held and cooked to order. Violation of risk control plan; 24-hour closure required. 2. Observed egg rolls on counter tested at 72 degrees. Crab rangoon on counter tested 69 degrees. Noodles sitting on top of steam wells in bowl tested at 111 degrees. Corrective action: Risk control plan states all potentially hazardous foods shall be cold or hot held. Due to violation of risk control plan, 24-hour closure required. 3. Observed multiple food items such as noodles, fried chicken, crab rangoon and egg rolls not date marked in cooler. Corrective action: All potentially hazardous food items prepared by establishment shall be given a discard date of the day it was prepared plus six days. Education provided.
